SHOCK TECHNOLOGY BOOSTS BRITISH FOOD HYGIENE

Sonic shockwaves that boost food hygiene by dramatically reducing cooking and cleaning time are at the core of a revolutionary process, PDX Sonic25, winner of the BOC sponsored technological development of the year at the Food Processing magazine awards held at the Copthorne Effingham Park Hotel, Gatwick.

The PDX Sonic25 replaces laborious multi-stage food production with batch processing that simultaneously mixes, pumps, homogenises and cooks liquid food using unique shockwave technology. The patented shockwave technology boosts food hygiene and reduces conventional rates of cooking by up to fifteen times and cleaning time by 80 percent.

The award winning PDX Sonic25 been developed over four years at a cost of £7m and was launched in January by Hertfordshire based company, Pursuit Dynamics plc. The specialist food business beat off three other competitors for the award, judged by a panel of food industry experts and readers of Food Processing magazine.

BOC sales support manager Liza Bichard, a member of the judging panel said: “we have been supporting this prestigious award for the last four years and yet again, have been delighted by the creativity and practical application of all the short-listed entries.”

Said Bichard: “innovation in food processing is key if the UK food industry is to maintain food quality standards. With food scares and reports questioning food hygiene being widely reported, there is a great deal of public interest in all aspects of the food chain.”
