POULTRY PROCESSORS USE BOC`S CRYOGENIC IMPINGEMENT FREEZER TO REDUCE DEHYDRATION, IMPROVE YIELD

Poultry processors who need to reduce dehydration and product inconsistency while improving yield are using the BOC cryogenic impingement freezers to help them meet their target.

The new freezer, which delivers the poultry industry’s highest freezing efficiency, was displayed to processors this week at the International Poultry Show in Atlanta, Georgia.

The cryogenic impingement freezer is the first of its kind and differs from standard impingement tunnel freezers in two significant ways, says Michael Newman, manager of equipment development for BOC’s, food solutions group. "Previous systems relied upon mechanical refrigeration. The new freezer combines high-velocity airflow with the atomized liquid nitrogen to produce a continuous, consistent, uniform freezing not found in mechanical impingement freezers," Newman says.

"The process has been tested on a variety of meat products with outstanding results, but is best suited to products with high surface-to-weight ratios, such as chicken fingers and patties and turkey burgers. It also can be used to quickly crust-freeze thicker products, such as chicken breasts. Crust-freezing traps product moisture, resulting in higher yield," Newman said.

"Dehydration loss is routinely well below the loss rate usually found in a conventional tunnel freezer. And, because the BOC impingement freezer runs at a much colder temperature than a mechanical freezer, you can achieve higher production rates using less floor space," he said.

BOC's impingement freezer produces extremely high convective heat transfer along with efficient use of cryogen to produce a continuous, consistent, uniform freezing across and along the belt from both the top and bottom surfaces. Plus, the freezer's modular design allows 10-foot-long sections to be assembled to fulfill a customer's precise requirements, up to a maximum of 50 feet in length.
